The Zuger Rötel is served filleted or poached whole in white wine and is served with a herb sauce cooked with rice or boiled potatoes. But only for a few weeks from mid-November when the Rötel catch is released by the cantonal government. During this time, various specialised restaurants around Lake Zug and Lake Aegeri offer it on their menus.
